last week i sat on my couch, opened the uber eats bag and dove straight into the MCT bar (and banana bread) from Impact Kitchen. zero fucks given. no one was around to witness it and i was in aaaallll my glory.
until it crossed my mind…
“girl. you just spent $25 to get 2 desserts delivered to your house and although these desserts are healthy they are not sugar-free”
[internal dialogue] - mmmm ok cassandra, enough dusting. get back to baking the most nutrient-dense, low inflammatory and delicious desserts cause you super can and you won’t feel like such a duster while you’re picking the crumbs off your couch (of course i ate them).
PS '“duster” is a word i use often to reference a slacker. it’s my favourite word.
i’ve made like 4 batches of these over the past week, perfecting, eating, sharing with loved ones, and now i’m stoked to share with you all! i hope you love it as much as my mom, besties and co-workers have this past week.
the moistest, cohesive, delicious, gluten, dairy and sugar-free donuts that’d be PERFECT for your holiday parties, as gift ideas or just to have around as snacks.
PERFECT PISTACHIO CHOCOLATE DONUTS | GF/DF/SF |
1 cup almond flour
1/2 c. unsweet cocoa powder
1/4 c. coconut flour
1 tsp. baking soda
1/2 tsp. salt
1/3 c. coconut oil
2/3 c. monk fruit extract
1/4 c. plant-based milk or coconut milk
4 large eggs
1 tsp. vanilla extract
4-6 oz. dark chocolate (70%), melted
1 c. crushed pistachio
WHIP IT UP:
set your oven to 350 and spray your donut pans with coconut oil or olive oil spray (hand grease is fine too).
place your pistachios in a food processor and blend until crumbly (about 10-20 seconds). no food processor? no problem! chop nuts with a knife until crumbly.
toss all ingredients (sans pistachios) in a food processor or bowl and mix until smooth and creamy.
bake the donuts for 18-20 mins or until a knife comes out clean.
let them cool before trying to remove from pan. trust.
using a double boiler melt the chocolate bar.
remove from heat and dip the top side of the donuts in the chocolate.
holding the donut over the bowl with pistachios, sprinkle a generous amount of the pistachio on top of the donut.
allow to sit for 5-10 mins and dig in!
