i looked at it and though “wtf am i gonna do with that thing?” (sorry vic, it’s true!)

you know what i’ve done with it?


i don’t want this to be a post just boasting about the truly amazing IntantPot, but i will say this; there’s legit a zillion recipes online, it takes 1/4 of the time to make complete meals and it’s the easiest cleanup.

so, with this cold weather arriving and me wanting to make more cooked, earthy and grounding foods i decided to make a rich, nutrient-dense and smoky soup to sip on all through the weekend.

it turned out fire.

  • 6 slices of high-quality bacon, chopped.

  • 1 cup green onion, diced.

  • 1 clove garlic, minced.

  • 1 tsp sea salt.

  • 1/2 tsp black pepper.

  • pinch of cayenne.

  • bunch of chard (just the leaves), roughly chopped.

  • 3 sweet potatoes, diced.

  • 4 cups (1L) of organic chicken broth.

  • juice of 1 lime.



  • set your InstaPot to sautee mode.

  • add the bacon pieces and cook until crispy, about 5 mins.

  • transfer to a plate or cooling rack and allow it to drain the excess fat.

  • keep 1 T of bacon fat in the pot and store the rest in the fridge for another recipe.

  • add the onions and sautee until fragrant (about 5 mins).

  • then add the garlic and cook for about 2 mins.

  • season with salt, pepper and cayenne.

  • toss the chopped chard in and sautee for another 4-5 mins or until soft.

  • add the sweet potato and chicken stock. place the lid back on and set to '“pressure cook” for 10 mins. make sure the venting tab is set to the ‘“sealing” position.

  • once the timer goes off turn the venting tab to “venting” and allow the pressure to release.

  • once it’s done releasing steam, open the lip and pour contents into a high-speed blender (i use a Vitamix).

  • blend until smooth and garnish with crispy bacon bits, sprouts, hemp seeds or avocado!


this recipe was my saviour this weekend. when i was in between errands, watering my in-home jungle (love my green babies) and taking disco naps, i’d sip on this and feel warm, satisfied and healthy 💚
